Another restaurant dedicated to seafood will replace Blue Point Coastal Cuisine next month in the Gaslamp, which shuttered last fall after 23 years. Currently scheduled to open in mid-February on Fifth Avenue, Saltwater is the newest neighborhood offering from Vincenzo Lo Verso and Alessandro Minutella, whose San Diego Dining Group runs Greystone, Panevino, and Osetra. Lo Verso, the co-founder of Farmer’s Table, is also part of the team behind Park Boulevard’s new Rusticucina.
Set up as fine dining, dinner-only restaurant, Saltwater wants to transport its guests to the Grand Canal in Venice, Italy via a sleek and contemporary nautical design reminiscent of a luxury yacht, with porthole-dotted mahogany walls in the dining room. The marble bar will display a variety of Mediterranean seafood on ice, providing the basis for much of the menu. Chef Christopher Washburn, who has worked in Italy and the U.S., will also be cooking up prime aged steaks and homemade pasta. And Saltwater’s glassed-in wine cellar will double as a private dining area.
